Under his Aunt’s tutelage, Executive Chef Anton Dayrit attended Manila’s Cordon Bleu, which was established by his great-grandmother in the 1940’s. He then attended Manila’s International School for Culinary Arts and Hotel Management, where he focused on Southeast Asian cuisine. Aspiring to expand his repertoire, Anton moved to New York City in 2005 and received an additional degree from The French Culinary Institute. After interning at Nougatine and Buddakan, Anton became chef de partie at Aureole and then Tabla. He then spent five years at ABC Kitchen and ABC Cocina, where he was sous chef in charge of production. He then became executive chef of Mighty Bowl, which now has three locations in Manhattan. He lives in Tribeca with his wife Anna. Anton played varsity basketball in high school and college, and considered turning semi-pro in Manila before choosing to become a chef.
Executive Sous Chef Minji Suh is a native New Yorker who graduated from Stuyvesant High School and received his B.S. in biomedical engineering from George Washington University. He always loved helping his mom cook, watching Hell’s Kitchen and Top Chef, and preparing meals for his friends. When the start-up he worked for went bankrupt in 2009, Minji’s career was at a crossroads; he decided cooking was his true calling. He graduated from the International Culinary Center in New York City (formerly The French Culinary Institute) and then interned and staffed at Michelin-starred Danji. He then worked at ABC Kitchen and Cocina for five years, first as sous chef of production and then as sous chef of evening service. Minji plays golf and produces electronic music in his spare time.
Founder Liz Mandarano is a fourth-generation Brooklynite whose great-grandparents moved to Williamsburg in 1902. Inspired by the neighborhood’s dynamic history, people, and architecture, she collaborated with Chef Dayrit to create a menu featuring classic American fare with international influences. Liz is an attorney, avid jogger, and a certified yoga instructor and teacher trainer of 15 years. Past endeavors include Yoga Effects and Arlington Place Bed & Breakfast. She enjoys spending her time in Williamsburg and Bed-Stuy with her son Eli and bulldog Lulu.
